Ingredients

  • 1 packet SEEDS OF CHANGE™ PERFECT FOR Fish: Lemon Garlic & Chive
  • 1 pound raw peeled medium (41-60) shrimp
  • 1 tbsp. organic olive oil
  • 16 oz. fresh salad greens, torn
  • 1 cucumber, sliced
  • 1 avocado, sliced
  • 2 sprigs fresh dill, snipped
  • 2 green onions, sliced
  • 4 radish, sliced
  • 1 lemon, cut into 8 wedges
  • 1⁄2 cup sour cream
  • 2 Tbsp. milk

Directions

  1. Remove 1 tsp. of the SEEDS OF CHANGE™ PERFECT FOR Fish: Lemon Garlic & Chive from the pouch and stir together with the sour cream and milk. Set aside and keep chilled until ready to serve.
  2. Toss shrimp, olive oil, and remaining SEEDS OF CHANGE™ PERFECT FOR Fish: Lemon Garlic & Chive together in a bowl to coat shrimp.
  3. Sautée shrimp over medium heat until the shrimp are cooked through, about 3-5 minutes. Remove from pan and set aside while you prepare the salad.
  4. In a large bowl, toss together salad greens, cucumber, radish, dill, green onions, and avocado with half of the dressing. Top with cooked lemon and herb shrimp, drizzle with remaining dressing and serve with lemon wedges. Enjoy!
