Tuna Veggie Alfredo

  • 1 cup sliced mushrooms
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped red pepper
  • 2 cloves garlic, finely chopped
  • 1 tablespoon olive oil
  • 1/2 cup vegetable broth
  • 1 medium summer squash, halved lengthwise and cut into 1/2-inch pieces
  • 1 cup snow peas
  • 2 teaspoons chopped fresh dill
  • 1 package (8.5 ounces) SEEDS OF CHANGE® Seven Whole Grains
  • 1 can (5 ounces) solid white tuna in water, drained*
  • 1 container (10 ounces) refrigerated light Alfredo sauce
  • Fresh dill
  • Lemon wedges
  • *For more tuna flavor, use a large can (12 ounces) of solid white tuna.


  1. In 12-inch nonstick skillet over medium heat, cook and stir mushrooms, onion, celery, red pepper and garlic in oil 5 to 7 minutes or until onion is tender.
  2. Stir in vegetable broth, squash, pea pods and dill.
  3. Heat to boiling.
  4. Reduce heat; simmer 5 to 7 minutes or until vegetables are tender.
  5. Stir in SEEDS OF CHANGE® Seven Whole Grains, tuna and Alfredo sauce.
  6. Cook and stir 2 to 3 minutes or until heated through.
  7. Garnish with fresh additional dill; serve with lemon wedges.
