Ingredients

  • 2 tbsps. extra virgin olive oil or ghee
  • ¾ cup sliced 1/8-inch onion
  • 1 (8-ounce) package SEEDS OF CHANGE™ Tikka Masala Simmer Sauce
  • 1 cup peeled, sliced 1/8-inch sweet potato
  • ½ package (7-ounces) drained extra firm tofu, cubed ½-inch (1 ½ cups)
  • 1 (8.5-ounce) package SEEDS OF CHANGE™ Organic Quinoa Brown Rice with Garlic

Directions

  1. Heat olive oil in 10-inch skillet over medium heat.
  2. Add sweet potatoes, onion, and cubed tofu.
  3. Cover and cook, stirring occasionally, until sweet potatoes are slightly tender (6–8 minutes).
  4. Add SEEDS OF CHANGE™ Tikka Masala Simmer Sauce packet; continue cooking, stirring occasionally, until heated through (4–5 minutes).
  5. Heat SEEDS OF CHANGE™ Organic Quinoa & Brown Rice with Garlic according to package directions.
  6. Serve warm SEEDS OF CHANGE™ Organic Quinoa & Brown Rice with Garlic on plate and top with sauce mixture.
  7. Garnish with green onions and parsley.
