Ingredients

  • 1 package (8.5 ounces) SEEDS OF CHANGE™ Organic Brown & Red Rice with Chia & Kale
  • 4 (4–5 ounces each) salmon filets, skin removed
  • 1/4 teaspoon salt
  • 4 lemon slices
  • 2 cups cut-up fresh asparagus
  • 1/3 cup chicken broth
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1/8 teaspoon pepper

Directions

  1. Heat oven to 375°F. Spray 8-inch square baking dish with cooking spray.
  2. Stir SEEDS OF CHANGE™ Organic Brown & Red Rice with Chia & Kale Blend, asparagus, chicken broth and lemon zest and together in baking dish; place salmon over rice.
  3. Drizzle lemon juice over salmon; sprinkle with salt and pepper.
  4. Cover tightly with aluminum foil.
  5. Bake 35–45 minutes or until fish flakes easily with fork.
  6. Garnish top of each filet with lemon slice.
