Quick Shrimp Paella

Who said fast can’t be good? In just 20 minutes, your taste buds will be smiling thanks to this recipe’s lively blend of shrimp, Chorizo sausage, organic Spanish-style rice, and spices. It adds up to a lot of flavor in a little time.

Ingredients

  • 1 tablespoon extra-virgin olive oil, divided
  • 1/2 pound raw peeled and deveined medium shrimp
  • 6 ounces chorizo sausage, casing removed and crumbled or bulk chorizo sausage
  • 1/2 cup chopped onion
  • 1 clove garlic, finely chopped
  • 1 package (8.5 ounces) SEEDS OF CHANGE® Spanish Style Rice
  • 1 cup canned diced tomatoes
  • 1/2 cup fresh or frozen (thawed) peas
  • 1/4 teaspoon smoky paprika
  • Pinch saffron
  • Chopped fresh parsley

Directions

  1. In 10-inch nonstick skillet, heat oil over medium-high heat.
  2. Cook shrimp just until pink, 3 to 4 minutes.
  3. Remove from skillet.
  4. Add sausage to skillet; cook and stir 3 minutes or until beginning to brown.
  5. Stir in onion and garlic. Cook and stir 3 to 4 minutes, until onion is tender and sausage is cooked through.
  6. Stir in SEEDS OF CHANGE® Spanish Style Rice, tomatoes, peas, paprika and saffron. Cook, stirring constantly, 2 to 3 minutes or until heated through.
  7. Stir in shrimp. Garnish with parsley.
