Ingredients

Meatballs:
  • 1 package (8.5-ounce) SEEDS OF CHANGE™ Organic Quinoa & Brown Rice
  • 1 egg
  • 2 cloves garlic, finely chopped
  • 1 tbsp. chopped fresh oregano
  • 1/2 tsp. salt
  • 1/2 pound lean ground beef or lean ground turkey
  • 1/4 cup finely chopped onion
  • 1 tbsp. chopped fresh basil
  • 1/4 cup grated Parmesan cheese
  • 1/4 tsp. pepper

Sauce:
  • 2 tbsps. extra virgin olive oil
  • 2 cloves garlic, finely chopped
  • 2 tbsps. chopped fresh basil
  • 1 tbsp. chopped fresh oregano
  • 1/2 tsp. pepper
  • 1 medium onion, finely chopped
  • 2 1/2 pounds Roma tomatoes, peeled, seeded and cut into 1-inch pieces
  • 2 tbsps. chopped fresh parsley
  • 1 tsp. salt
  • Dash ground cayenne pepper

Tip:

Jarred pasta sauce can be substituted for the sauce

 

Directions

Sauce:
  1. In a large saucepan, heat oil over medium heat.
  2. Cook and stir onion and garlic in oil, 3 minutes.
  3. Stir in remaining sauce ingredients; heat to boiling.
  4. Simmer covered 20 minutes, stirring occasionally.
  5. Uncover; crush tomatoes with potato masher or large spoon.
  6. Simmer uncovered 10–15 minutes longer until thickened.
  7. Meanwhile, line broiler pan with foil; spray broiler rack with cooking spray.
Meatballs:
  1. Combine all meatball ingredients in a large bowl.
  2. Shape into 1-inch balls. Place meatballs on broiler rack.
  3. Turn oven to broil. Broil meatballs 4–5 inches from heat 7–9 minutes, turning once, until browned and internal temperature reaches 160°F. Stir meatballs into sauce.
