Chipotle Breakfast Tacos with Ham, Eggs & Brown Rice

Ingredients

  • 1 package SEEDS OF CHANGE™ Organic Quinoa & Brown Rice
  • 1 cup (4-ounces) diced deli ham (1/4 x 1/4-inches)
  • 4 eggs
  • 1 package SEEDS OF CHANGE™ Taco Roasted Chipotle Simmer Sauce
  • 2 tbsps. extra virgin olive oil
Garnishes:
  • Corn chips
  • Sour Cream
  • Guacamole
  • Chopped Green Onions

Directions

  1. In 10-inch skillet place SEEDS OF CHANGE™ Organic Taco Roasted Chipotle Simmer Sauce, SEEDS OF CHANGE™ Quinoa & Brown Rice packet and diced ham pieces.
  2. Heat over medium heat, stirring occasionally, until heated through (4–5 minutes); set aside and keep warm.
  3. Meanwhile, in clean 10-inch skillet, heat 1 tbsp. olive oil over medium heat.
  4. Add 2 eggs and cook either sunny-side up or over-easy.
  5. To serve: place about ¾ cup SEEDS OF CHANGE™ Organic Taco Roasted Chipotle Simmer Sauce and SEEDS OF CHANGE™ Organic Quinoa & Brown Rice mixture on plate and top with 1 cooked egg.
  6. Garnish with corn chips, guacamole, sour cream and chopped onions.
  7. Repeat with remaining eggs.
