Sage, Savory & Thyme
Salvia officinalis

Start From Seed: Detailed instructions for direct seeding, or starting seeds indoors and transplanting.
Direct seed in the garden in early spring. Plant seeds ¼” deep, 3-4 seeds per foot, in rows 12-18” apart. Thin seedlings to 8” apart in the row. Optimum germination occurs at soil temperatures from 60–70°F, but seeds will germinate at as low as 45°F.
Growing Conditions: Growing seasons, soil types, water and fertility requirements.
Sorrel is a hardy plant that provides healthful greens early in the spring and late into the winter. It prefers partial sun as the hot weather of summer can make it bitter. If the leaves get ‘scruffy’, cut them back to ground level and new tender leaves will grow back.
Pest Prevention: Organic solutions to common problems.
Sorrel is generally pest-free.
Harvest: Is it ready yet? When to harvest and how to store your garden produce.
Cut leaves with scissors as needed. Use freshly picked as the delicate leaves do not last more than a day or two after harvest. Wash immediately before using and spin-dry in a salad spinner or pat dry with a towel.
