Also known as "Bolivian Sunroot," this unique tuber has been a staple of the Andean people for centuries. Delightfully sweet and crunchy, reminiscent of jicama or water chestnut. Yacon has fuzzy broad leaves that are resistant to most pests and produces 1 in. bright orange flowers in 4-5 months. The tubers are excellent raw with a dash of chile, shredded in salads, or lightly steamed. Rarely seen outside of the Andes, these frost sensitive seedlings will be shipped via 2-Day Air to ensure safe delivery.
